cannellini

Ingredients (Serves 4)

2 cans 400g cannellini beans
4 tomatoes
1 large can of white-fin tuna
Half a large onion
1 large green paprika
Azada extra virgin olive oil
Balsamic vinegar
Salt
Pepper

Instructions

Pour both contents of cans into a colander and wash off liquid. Throw beans into a salad bowl. Chop up into small pieces the onion, tomatoes and the paprika and add to the bowl. Drain the tuna and also add to the bowl. Now season with salt and pepper and a couple of tablespoons of balsamic vinegar. Finally add several good slugs of azada extra virgin olive oil and mix thoroughly.

Although this is very simple to do and absolutely delicious to eat, the ingredients are very important.
Ingredients
You need good bread – if you can get a French or Spanish baguette – that is fine. If you can get “farmer’s bread”, even better.
Use the very ripe, sweet tomatoes with lots of pulp.
Some garlic
Then good oil. The very best. Azada is just right.
Salt
Instructions
Slice the bread of the baguette as if you were going to make a sandwich. Take one of the slices and rub the fresh garlic and then the halved tomatoes on it until all the pulp is soaked into the bread. Then sprinkle a little salt on top. Next add the oil and pour it in a fine zig-zag till you cover the whole bread.
Now open your mouth and taste it! Wonderful to go with almost anything but best of all, with a Spanish
omelette made with potatoes and onions.
By the way, if the bread is a few days old, then toast it before making your Pà i Tomaquet!
