Delicioso Lamb with Thyme Baked Potatoes and Beans

Ingredients ( Serves 4 )

500g boneless leg of lamb
500g small baking potatoes
500g green beans
azada thyme extra virgin olive oil
azada extra virgin olive oil
Salt
Pepper

azada thyme extra virgin olive oil
azada extra virgin olive oil

Instructions

Heat oven to 180C. Halve the potatoes and place into a pot of boiling water and boil for 15 minutes or until cooked.
 Drizzle some azada thyme extra virgin olive oil into an oven dish. Place the cooked potatoes into the dish. Now sprinkle with salt and pepper, add some more thyme olive oil and place into oven for 20 minutes.

Wash and cut ends off green beans and cook in pan with a tablespoon of azada extra virgin olive oil, salt and pepper until slightly brown.
 Meanwhile pour 1-2 tablespoons of azada extra virgin olive oil onto a griddle and when hot place lamb on top. Sear both sides quickly to seal the pores. Season lightly with salt and pepper. Place the lamb onto an oven tray and slide into the oven for approximately 10 minutes if you like it pink or a little more if you prefer it well-done. Let lamb rest for 5 minutes before serving to allow juices to flow!

Serve lamb, potatoes and beans on plates and you're done!

Excellent dish, this truly deserves more than 5 stars in our book! We had this for dinner last night and couldn't stop eating it. I made as written, but added some fresh thyme.

My boyfriend doesn't like lamb much at all, and he went back for seconds. He said if he were to get this in a restaurant he would be pleased.

I could eat this at least once a week and not get tired of it. Thanks, this one is a real winner. We will definitely make this often :)
